Lemon Curd Cupcakes

I don’t like cupcakes because the cupcakes are too sweet for me. However, today I make cupcakes that are sweet and sour at the same time, can you guess what cupcakes did I make? Oh well, it is written in the title of the post.

Yes “Lemon Curd Cupcakes”.

Ingredients :

Lemon Curd :

  • 120 ml lemon juice
  • Zest of lemons
  • 60 gr butter
  • 200 gr sugar
  • 110 gr eggs

Cupcake :

  • 195 gr all purpose flour
  • 200 gr sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 113 gr butter
  • 110 gr eggs
  • 120 ml strawberry yogurt

Method :

Lemon Curd :

  1. In a bowl, put lemon juice, lemon zests, butter and sugar and put the bowl on top of a large pot filled with water. Bring the water to boil [make sure the water does not touch the base of the bowl].
  2. Stir the ingredients until the butter melts.
  3. Whisk the eggs in another bowl.
  4. Once the butter has melted, slowly pour the eggs and lemon zests into the bowl and stir the ingredients constantly for about 10-15 minutes or until it shows creamy and thick texture.
  5. Pour into a bowl and let it cool down in a room temperature for a while before fill them into jars.
  6. Once the curd cools down, pour it into jars and place them in the fridge until they are needed.

Cupcakes :

  1. Preheat the oven to 180 degrees. Grease the cupcake pan and set aside.
  2. Sift flour and baking powder in a bowl.
  3. In another bowl, beat butter, sugar and salt until smooth and then stir in the eggs.
  4. Mix and fold the flour mixture with butter egg mixture [don’t overmix them].
  5. Mix in vanilla extract and strawberry yogurt.
  6. Pour into the cupcake pan and bake for about 25-30 minutes [depending on oven type] or bake until an inserted toothpick comes out clean.
  7. Let the cupcakes cool on a cooling rack for 10 minutes.
  8. Make a hole at the top of each cupcakes and put the lemon curd on top of the cupcakes.
  9. Serve and Enjoy.

Saya tidak menyukai cupcakes karena menurut saya rasa cupcakes terlalu manis. Namun, hari ini saya membuat cupcakes dimana kamu bisa merasakan rasa manis dan rasa asam pada saat bersamaan, bisakah Anda menebak cupcakes apa yang saya buat?  Yup, “Lemon Curd Cupcakes”. 

Bahan : 

Lemon Curd: 

  • 120 ml jus lemon          
  • Kulit lemon          
  • 60 gr mentega          
  • 200 gr gula pasir          
  • 110 gr telur

Cupcake:          

  • 195 gr tepung terigu         
  • 200 gr gula pasir          
  • 2 sdt baking powder          
  • ¼ sdt garam          
  • 113 gr mentega          
  • 110 gr telur          
  • 120 ml yogurt stroberi 

Metode : 

Lemon Curd:       

  1. Dalam mangkuk, masukkan jus lemon, kulit lemon, mentega dan gula, lalu masukkan mangkuk di atas panci besar yang berisi air. Panaskan air tersebut sampai mendidih [pastikan air tidak menyentuh dasar mangkuk].     
  2. Aduk bahan sampai mentega meleleh.
  3. Kocok telur di mangkuk lain.      
  4. Setelah mentega meleleh, perlahan tuangkan telur dan lemon ke dalam mangkuk dan aduk bahan terus selama sekitar 10-15 menit atau sampai teksturnya kental dan tebal.
  5. Tuangkan ke dalam mangkuk dan biarkan dingin dalam suhu kamar untuk sementara sebelum mengisi mereka ke stoples.
  6. Setelah lemon curd  mendingin, tuangkan ke dalam stoples dan letakkan di lemari es sampai dibutuhkan. 

Cupcakes: 

  1. Panaskan oven sampai 180 derajat. Olesi tempat cupcake.
  2. Saring tepung dan baking powder dalam mangkuk.
  3. Di mangkuk lain, kocok mentega, gula dan garam sampai halus lalu aduk di telur.
  4. Campur campuran tepung dengan campuran mentega telur (jangan terlalu banyak).
  5. Campur dengan yogurt stroberi.
  6. Tuangkan ke dalam tempat cupcake dan panggang selama sekitar 25-30 menit [tergantung pada jenis oven] atau panggang sampai tusuk gigi dimasukkan keluar bersih.
  7. Biarkan cupcakes mendingin di ruang temperatur.
  8. Buatlah lubang di bagian atas setiap cupcakes dan taruh lemon curd di atas cupcakes.
  9. Sajikan dan Selamat Menikmati.
